This one is just so easy. Bung it in the oven and do something else whilst it cooks.
I’ve used some leftover cooked & cooled green beans- but you could use what you wanted.
The beans are just thrown on spinach or salad leaves.
Wash and cut 1/2 a small bag of new potatoes (roughly about 4-5 per person)- put them on a baking tray.
I spray mine with olive oil spray (or you could put a small amount of oil in a plastic bag, put the potatoes in and move around).
Put in a preheated oven at 200 degrees centigrade for about 10 mins then add the fish.
Take a salmon or trout fillet- place on some foil, add a small knob of butter, seasoning and a squeeze of lemon juice.
Fold the foil over making a ‘parcel’. That’s it- repeat this for the number of fillets you’re cooking – place on a baking tray.
Put fish in the oven (after potatoes have been in for 10 mins).
Cook for about 15 mins and check fish is cooked through – it should look plump and juicy and be hot to touch.
Serve by placing the fish and potatoes over the green beans & salad.
Add balsamic glaze or vinegar
