Chop 1/2 to 1 onion – add some crushed garlic cloves

Cook in some melted coconut oil

Here you can add in some bacon or pancetta – up to you

Chuck in a large bag of prawns – mix

Add one tin of chopped tomatoes.

Let this simmer away – til the liquid is reduced a bit.

Crumble in about 50gms Feta or goats cheese works equally well

This will make it lovely & creamy.

Season with freshly ground pepper – taste.

Add washed, torn basil leaves.

Get stuck in.

I love a bowl with fresh brown bread.

Or brown rice works well.
