This coconut prawns recipe is  so easy & quick to make.

It took me about 6 mins to prep and cook.

Here’s what you need to do for this lovely prawns recipe:

Heat 1 tbsp of coconut oil in a pan

Add 1 chopped shallott and about 2-3 crushed garlic cloves,

Cook for about 2 mins – don’t let them brown.

Add 200gms large prawns, and cook for about 3 mins.

Chuck in 2 tbsps of grated coconut ( I use a coconut ‘block’ which is 100% natural coconut)

Plus a squeeze of lemon juice, Stir through and cook for a little longer if you want to brown the prawns.

Eat – I ve got some fresh basil in the picture but ideally sprinkle over some chopped dill.
