Thought I’d share it with you, as only last week one of my mates asked me for it.

Super speedy Guacamole.

Quick, tastes great & healthy (if you don’t eat the whole bowl).

Bung the flesh of 3/4 ripe avacados, with 1 chopped tomato , black pepper & the juice from about half a fresh lemon or lime into a processor & whizz.

Taste & readjust seasoning if needed, or add more of the fresh juice then whizz again. Repeat if you need to.

Done.

Enjoy.

I serve mine with cut up peppers, carrot & cucumber 🙂
