How about trying these out?

Took me about 15- 20 mins to prepare then I bunged them in the oven at 160 degrees c Fan oven or 180 degrees conventional (350 F)

Cook 500gms lean (5 {16d13fd70413c4a6a6ad23dd302b5c19c29a12dadea36322813e38d23061cd1e}) minced beef with 1 shallot & 3 crushed garlic cloves.

Stir whilst cooking over a medium heat until the meat has browned.

Place in a bowl.

Mix in one cup of brown cooked rice, 2-3 tbsps cheese (I used parmesan), 1 tbsp dry herbs of your choice, 3-4 tbsps of tomato puree & seasoning.

Use red or yellow peppers as they taste nicer when roasted.(This mixture is enough to fill 6 peppers)

Wash the peppers and slice off the top, deseed.

Fill peppers and place the top back on.

Place in shallow tray- brush with olive oil.

Cook for about 40 mins- test that the filling is hot. The peppers will look roasted & ‘softer’

Serve with spinach or salad leaves and enjoy.
