Do you get bored of cooking & eating the same veg all the time?
This one is super easy- it's all root veggies & obviously you can choose what you like.
You can also alter the flavours, depending on what your serving your veggies with. This one is great to have on the side of a roast dish, there are no competing flavours.
But if you fancy spicing it up a bit with curry powder, then it tastes great too - I often add plain cooked chicken to have it this way.
Or if you're a vegetarian or vegan you might want to add a tahini dressing to the veg.
This dish uses;
1 bag parsnips, peeled & chopped
2 red onions, sliced
1 cauliflower , cut & sliced
1 seasonal squash sliced, skin left on pips etc removed
About 3-4 carrots, peeled & sliced
About 6-8 garlic cloves, peeled & sliced
1 can of chick peas
Olive oil
Black pepper & salt.
When you've chopped all the veg up, place in a large ovenproof dish.
Add the drained chickpeas.
Mix the chickpeas & veg up - drizzle about 2-3 tabelspoons of olive oil over & season.
You want to see that the veggies are 'coated' with a thin layer of olive oil, so you may have to add more depending on how much veg you have
Cook in a pre-heated oven for about 45-60 mins at 200 degrees centigrade or gas mark 6.
