Super easy- this one you can prep in 5 mins.
And you can make loads, which saves lots of time later.
Get it on the hob simmering- do your other stuff then it’s ready to go.
I love it- my kids love it & it works for lots of dishes (don’t worry they’re coming soon).
(This recipe will make enough sauce for two different dishes or one big meatball cook up).
Chop up 1 onion, peel 4-5 garlic cloves, open about 4 tins of chopped tomatoes (440 gms each) or 4 cartons of tomato passata (500 gms each).
Dissolve a chicken stock cube in about 1/4 cup of boiling water.
That’s the prep done.
Splash some olive oil or rapeseed oil in a large saucepan.
Add the chopped onion & crushed garlic.
Cook for a few minutes, stirring.
Add the tomatoes, stock, seasoning & 2-3 tablespoons of dried mixed herbs- stir.
I normally taste it to see if the seasoning is ok. If not I’ll add more herbs/black pepper.
Bring this to the boil, then turn down & simmer for about 30 minutes, a good indication of it being cooked is tasting the onions, if they’re soft it probably is cooked through.
Stir it occassionally- you’re free to do your other stuff now.
Taste it again- the flavour of the tomatoes will have come through and it tastes yummy (and it’s really healthy).
I then whizz mine (as the kids don’t like the ‘lumps’ of tomato) if I’m using cans of tomatoes.
It’s now ready to go- it freezes really well once cooled as well.
I made chicken & pasta bake with it the other day – I always add some boiling water to the sauce as well, about 1/2- 1 cup as it’s really concentrated.
It would make a great soup as well.
